Shawnee Mission South grad Randy Price and his son Brennan are set to open Urban Egg Eatery, an award-winning breakfast and lunch restaurant. The opening is planned for later this month in Overland Park.
Where exactly: The Colorado-based restaurant is officially launching its space in Hawthorne Plaza at 4921 W. 119th St. on Monday, April 25.
“We could not be happier with this location and are looking forward to joining the breakfast scene,” Price said. “We looked at several locations, focusing on daytime population, high density of rooftops and areas that seemed underserved in the breakfast segment.”
Food selection: The new Urban Egg is the Price family’s 10th restaurant and their first outside of Colorado.
Signature menu items include some classics: biscuits and gravy, huevos rancheros and pancakes, which are made from scratch daily.
Other less traditional menu items include stuffed French toast, avocado toast with Pacific salmon, strawberry cheesecake pancakes and a variety of eggs Benedict options.
The restaurant also has both an alcoholic and non-alcoholic selection of signature drinks, such as sparkling mimosas, coffee cocktails, Bloody Marys, cappuccinos, cold brews and more.
Hours for the restaurant will be 7 a.m. to 2 p.m. Mondays through Fridays, and 7 a.m. to 2:30 p.m. Saturdays and Sundays.
The background: Price grew up in Overland Park and spent three years working with Houston’s multiple restaurant locations after graduating from SM South.
Moving to Colorado in 2000, he then formed the Rocky Mountain Restaurant Group before later opening the first Urban Egg in 2014.
His son Brennan returned to Colorado the following year to help grow the company and became a partner in 2020.
