Cookie Co. bringing gourmet cookies to Lenexa’s Sonoma Plaza

Cookie Co., a California-based company specializing in jumbo-sized gourmet cookies, will open later this spring in Lenexa’s Sonoma Plaza commercial area.

Kerri Priest, an owner of the local franchise group, said additional locations are also planned in the BluHawk development in south Overland Park and in Kansas City, Mo.

Cookie Co. in Lenexa hopes to open in late April

  • The Lenexa Cookie Co. is at 8748 Loiret Blvd., between the new MOD Pizza and Dentists of Lenexa.
  • Right now, work on the storefront is underway. Depending on permits and contractor timelines, Priest expects the Lenexa location to open its doors on or around April 28.
  • The franchise group opening Cookie Co. locations in the KC metro include former Kansas City Chiefs offensive lineman Jordan Devey and his wife Linsey.

Each cookie averages about 6.5 oz.

  • The chocolate chip cookie, which Priest described as “ginormous,” is a menu mainstay.
  • The other three cookies on the menu change weekly with some recurring flavors, like Nutter Butter, french toast and the peanut butter overload cookie called the Parent Trap.
  • Cookie Co. also serves twisted sodas, which are soft drinks with flavored syrups.
  • A line of Cookie Co. canned cold brews are also being rolled out across the U.S. at franchise locations, and Priest expects to serve those in Lenexa as well.

The company has pandemic origins

  • Cookie Co. first got its start in 2020 by husband-wife duo Elise and Matt Thomas.
  • When Matt lost his job, Elise started selling homemade cookies.
  • In the three year’s since, they’ve grown to nearly 20 Cookie Co. stores across the U.S., many owned by franchisees.

More Sonoma Plaza businesses are opening this year

  • Cookie Co. is one of a handful of businesses coming into Oddo Development’s Sonoma Plaza this year.
  • That includes a Charlie’s Car Wash opening later this spring, as well as a Chase Bank branch.
  • Panera is also expected to open a new location in the same shopping center later this year.
