Cookie Co. opening soon at Bluhawk in Overland Park

Gourmet jumbo cookie bakery Cookie Co. is working to open a new franchise location in southern Overland Park.

The California-based company is eyeing a late April opening for its new space in the Bluhawk development at 7765 W. 159th St., according to the location’s Google page.

The menu changes on a weekly basis

  • Three of the cookies on the menu change weekly, with some recurring flavors, like french toast, orange blossom and sea salt Nutella.
  • However, Cookie Co.’s chocolate chip stays on the menu year-round.
  • With each cookie on average weighing about 6.5 ounces, customers can purchase single cookies, a four pack or a party pack of 12 cookies.
  • In addition to cookies, the store also serves twisted sodas, which are soft drinks with flavored syrups.

Cookie Co. first opened in 2020

  • The gourmet cookie company was started by husband-wife duo Elisa and Matt Thomas during the  COVID-19 pandemic.
  • Elise Thomas started selling homemade cookies after Matt Thomas lost his job.
  • In three year’s time, the company has grown to open nearly 20 stores across the country, with many owned by franchisees.
