California-based cookie chain Cookie Co. has officially opened its latest Johnson County location in south Overland Park.
The shop held its grand opening this past Saturday at the still-growing Bluhawk shopping complex off U.S. 69 Highway and 159th Street.

Where is it exactly?
- The shop operates at 7765 W. 159th St., in a space on the east end of the Bluhawk shopping center.
- It neighbors JINYA Ramen Bar and the recently-opened Nekter Juice Bar.
- Cookie Co. operates from 10 a.m. to 9 p.m. Monday through Saturday and from 10 a.m. 3 p.m. Sunday.
Cookie Co.’s cookies are 6.5 ounces
- The company bakes and sells cookies of four flavors each week.
- The shop’s chocolate chip cookie is on the menu year-round, but the other three flavors switch every week. (This week’s menu at the new Bluhawk shop features Biscoff, caramel apple crumb and chocolate malt cookies.)
- Customers can buy single cookies, packs of four or party packs of 12 cookies.
- In addition to cookies, Cookie Co. also sells “twisted sodas” — sodas with flavored syrups, like peach or raspberry.
Another JoCo location opened earlier this spring
- Johnson County’s local franchisee of the West Coast-based company opened its first shop in Lenexa in April.
- Cookie Co.’s origins go back to 2020, when company owners Elisa and Matt Thomas started selling homemade cookies after Matt lost his job during the COVID-19 pandemic.
- Since then, Cookie Co. has opened several stores across the country and now operates in nine different states.
