Nebraska-based Copps Pizza opening first Johnson County location

An Omaha-based “family-style” pizza restaurant will soon expand into Kansas.

Copps Pizza has a new location in the works, opening in southern Overland Park at the end of the month.

Copps Pizza will operate at the Corbin Park shopping center

  • The restaurant will move into a space at 6301 W. 135th St.
  • The Social Club event venue previously occupied the space.
  • The building also neighbors the Petco store at Corbin Park that opened earlier this year.
  • Copps Pizza will operate from 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday and Saturday, and 11 a.m. to 9 p.m. Sunday.

Copps serves hand-crafted pizzas

  • The Copps menu features a range of 8-inch to 12-inch pizzas — from traditional cheese and pepperoni to “eccentric” signature flavors like “deluxe nacho” and “chicken and waffles” pizzas.
  • Outside of pizza, the restaurant also serves several other entrees like chicken wings, salads, pastas and seafood dishes.
  • Copps Pizza also offers a range of dessert pizzas, including cinnamon crumble and s’mores.
  • “We just really want to create an environment that everybody from young to old can enjoy,” said owner Kris Copp.

This is Copps’ first Johnson County restaurant

  • It also marks the first Copps Pizza in the Kansas City metro area as a whole.
  • Copp previously lived in the Kansas City area and managed several Pizza Hut locations across the metro.
  • He and his father, William Copp, opened the original Copps Pizza in Omaha in 2019 and now operate three locations there.
  • Copp said they intend to open three to four or five more Kansas City metro area locations over the next three years.
  • “A big part of coming back to Kansas City is being able to share something that we’ve built with all the people we know and the people that I grew up with,” he said. “I think that’s kind of fun and exciting.”
