Omaha-based Copps Pizza opens in south Overland Park

A restaurant specializing in hand-crafted pizza has officially opened in Johnson County.

Copps Pizza Company soft-launched its new location in southern Overland Park at the end of last week.

Copps Pizza opened at Corbin Park

  • The restaurant now operates at 6301 W. 135th St., on the eastern end of the Corbin Park shopping center.
  • The Social Club event venue previously occupied the space.
  • Copps Pizza is open from 11 a.m. to 9 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday and Saturday, and 11 a.m. to 9 p.m. Sunday.

The restaurant serves “family style” pizza

  • The Copps menu features a variety of pizza flavors, from traditional cheese and pepperoni to signature flavors like crab rangoon, chicken and waffles and deluxe nacho.
  • Pizzas come in 8-inch, 12-inch, 14-inch or 16-inch sizes — with a range of crust options, including original, stuffed or vegan.
  • In addition to pizza, Copps Pizza offers a number of other entrees like salads, pasta, burgers and chicken wings.
  • The menu also features dessert pizzas, which come in cinnamon crumble, apple, blueberry or S’mores flavors.

This is Copps’s first Johnson County restaurant

  • Owner Kris Copp opened the original Copps Pizza with his father, William Copp, in 2019.
  • That original location opened in Omaha, and since then, the son-and-father duo have opened two more locations there.
  • The Copp family intends to expand further with three to four or five more Kansas City metro area locations over the next three years.
