The past year has been a big one for Betty Rae’s.
The Kansas City, Missouri-based ice cream shop opened two northeast Johnson County locations last summer — one in Merriam and another in Prairie Village.
Now, the company has set its sights further south. The ice cream shop has landed a new location in southern Overland Park, which owner Matt Shatto estimates will open in May.
Betty Rae’s is coming to 6936 W. 135th. St.
- The ice creamery will take over a space at Deer Creek Marketplace, near grocery store Hen House.
- Bubble tea cafe Fat Bee previously occupied that space.
- Once it opens, Betty Rae’s will operate from 11 a.m. to 9 p.m., Sunday through Thursday, and 11 a.m. to 10 p.m., Friday and Saturday.
This marks the fourth Betty Rae’s in Johnson County
The brand made its Johnson County debut in 2023 with a shop in northern Olathe near the Lenexa city line.
Last summer, Betty Rae’s opened its second Johnson County location at Merriam Town Center.
That location doubles as a production facility and test kitchen, where customers can try out new flavors before they hit other stores.
In August of last year, Betty Rae’s opened another new shop at the Meadowbrook shopping center in Prairie Village.
The menu at Betty Rae’s features ice cream in a variety of “mainstay” flavors like cereal milk, cookie dough, s’mores and lavender honey.
Betty Rae’s also offers some dairy-free options, as well as rotating specials like matcha, pistachio and black forest cake.
“You’re going to see the same from-scratch, top of the line ice cream offerings that you see in any of the other stores,” Shatto said about the Overland Park location. “And they’ll obviously be backed by our same outstanding customer service.”

The ice cream shop’s flagship location opened in 2016, in Kansas City’s Waldo neighborhood.
Betty Rae’s also has a location in the River Market.
“The 135th Street corridor has always been something that we’ve had our eye on,” Shatto said about the new Overland Park store. “We are very fond of a lot of the brands along there.”
The Overland Park location isn’t the only way in which Betty Rae’s is growing, either. The company is also in the process of growing its franchising program, with its first out-of-state franchise now open in Omaha, Nebraska.
Both in and outside of its home turf, Shatto said the ice cream shop will continue to expand its footprint.
“Whether it’s South Johnson County, whether it’s the Northland, or whether it’s Lee Summit or anywhere in between, (we want) to get to as many regions of Kansas City as possible,” Shatto said. “We are not shying away from the idea of trying to get Kansas City’s best ice cream to more people.”
