Einstein Bros. opens new bagel shop in Olathe, its first in the city

The new bagel shop off Kansas Highway 7 is the Colorado-based chain's sixth overall in Johnson County.

Colorado-based bagel chain Einstein Bros. has officially unveiled its newest Johnson County shop.

The company recently opened its new Olathe bagel shop, marking its first location in that city.

Einstein Bros. opened at 295 N. Kansas Highway 7

  • The new bagel shop opened in a 1,511-square-foot space just off K-7 and Santa Fe Street in Olathe, near breakfast eatery First Watch.
  • A GameStop store previously occupied that space.
  • Einstein Bros.’ regular hours in Olathe are 6 a.m. to 2 p.m. daily.

Einstein Bros. serves “just-out-of-the-oven” bagels

  • The shop offers a variety of “fresh-baked” bagels, from sweet options like cinnamon raisin and chocolate chip to savory ones like cheddar jalapeño and sesame seed.
  • The same variety of sweet and savory goes for its “shmears” (cream cheese spreads), in flavors like garden veggie, hot honey, honey almond and strawberry.
  • The shop is also known for its bagel sandwiches, with both breakfast options like egg sandwiches and lunch options like ham and Swiss.

This marks the sixth Einstein Bros. in Johnson County

  • The new Olathe shop is the first in the city but not the first in Johnson County.
  • In 2024, Einstein Bros., opened a shop in Lenexa, near Oak Park Mall in Overland Park.
  • The bagel shop also has two locations in Overland Park, as well as shops in Prairie Village and Fairway — along with a couple of shops in Kansas City, Missouri.
