Deal done on Pizza 51: New restaurant coming to Fairway this summer

Pizza 51 owner Jason Pryor told shawneemissionpost.com last night that his company had finalized the purchase of the old Sinclair station on Mission Road, and will be opening up a new restaurant there this summer.

Pryor will be finishing building plans for the restaurant over the next couple weeks. Once they’ve been submitted to the city of Fairway and approved, Pryor says he expects a three to four month renovation process.

“Our goal was to be open by July 4, but I’m not sure we’ll be able to hit that,” he said. “But we should be open sometime in July.”

Pryor said the restaurant, to be called Pizza 51 West, will largely follow the concept of the successful Brookside original — though with 300 square feet more space than the Brookside restaurant, he anticipates they may be able to add some menu options.

“People can expect a lot of the same concept as the original,” Pryor said. “But we’ll do our best to add a few items.”

Pryor said he hoped to be able to offer a coffee counter at the restaurant as well.
