Abelardo’s Mexican Fresh will take over a former Steak and Shake off Shawnee Mission Parkway in northern Overland Park.
The Midwest-based Mexican food franchise plans to open in the restaurant space at 7510 W. 63rd St.
A sign posted along the busy parkway says the restaurant is “coming soon,” though it doesn’t advertise an exact opening date.
As of Friday afternoon, crews had started painting the building red and green.
Abelardo’s serves breakfast all day, other classics
- For breakfast, diners can order omelets and burritos.
- Abelardo’s also serves dozens of combo platters, taco options, tortas, tostadas, enchiladas, burritos, quesadillas and nachos.
- There are also jalapeño poppers and chile rellenos on the menu.

Abelardo’s is expanding in Johnson County
- Abelardo’s, based in Nebraska, has dozens of locations in the Midwest.
- The chain recently opened another restaurant in an old KFC Taco Bell hybrid eatery in western Shawnee.
- Another Overland Park Abelardo’s opened earlier this year in the Prairie Center complex at 12224 W. 135th St. That space was formerly a Taco Via.
- Plus, there is another location in Olathe.

Steak and Shake left Overland Park earlier this year
- The ’50s-style diner closed in Overland Park at the end of August.
- Steak and Shake operated out of that location for years, serving up steakburgers and hand-dipped milkshakes.
- There is still a Steak and Shake in Olathe at 12209 S. Strang Line Road.
