A restaurant serving up Mexican-style morning eats has opened its doors in Johnson County.
Owners of popular morning eatery The Breakfast Spot officially opened their new concept, Con Huevos, last week in Overland Park.
Con Huevos operates at 8881 W. 75th St.
- The restaurant moved into a space at the Antioch 75 Shopping Center, near Dos Reales Mexican Restaurant.
- Jade Bowl Chinese Restaurant previously occupied the space, before it closed in 2022.
- Con Huevos operates from 6:30 a.m. to 2:30 p.m. every day.
Con Huevos specializes in Hispanic breakfast
- Customers can find a range of Hispanic breakfast items on the Con Huevos menu, such as chilaquiles, huevos rancheros, and skillets with a variety of meats and veggie options.
- Other items include biscuits and gravy, omelets, cinnamon rolls and pancakes.
- Owners Luis and Jennifer Ornelas also own and operate The Breakfast Spot, which opened roughly six years ago in Leawood.
- The name of the restaurant itself translates to “with eggs” — a nod to a section of the Breakfast Spot’s menu that, Luis Ornelas said, is home to several customer favorites.
- “That section is actually becoming pretty popular, and I just wanted to take advantage,” he said.
This is the owners’ second JoCo breakfast eatery
- As the restaurant grew in popularity, Luis Ornelas said he knew he wanted to expand with a second restaurant — but unlike the sit-down vibe of The Breakfast Spot, he wanted Con Huevos to focus more on “fast-casual” counter service.
- Con Huevos also focuses strictly on breakfast, while The Breakfast Spot offers lunch as well.
- Ultimately, Ornelas said he foresees expanding Con Huevos with more locations in the future.
