Mi Ranchito owner sets sights on new ‘upscale’ Mexican restaurant in Prairie Village

Rulber De La Torre, the founder of the local Mexican chain, plans to take over the former Another Broken Egg Cafe space near 95th and Nall.

Not long after the closure of a breakfast eatery in Prairie Village, a new Mexican eatery is already poised to take its place.

Rulber De La Torre, owner of popular local Mexican restaurant chain Mi Ranchito, plans to launch a new “upscale” concept in a space in the Meadowbrook Shopping Center near 95th and Nall.

The new restaurant, dubbed Rulber’s Restaurant Mas Cantina, will move into the space previously occupied by Another Broken Egg Cafe, which closed its doors permanently in Prairie Village earlier this week.

Rulber’s is coming to 5358 W. 95th St.

  • The restaurant is moving into a space at the Meadowbrook Shopping Center in Prairie Village, just off 95th Street and Nall Avenue, at a point where the Prairie Village and Overland Park city limits meet.
  • There, it will operate near ice cream shop Betty Rae’s and a franchise of another breakfast eatery, The Big Biscuit.
  • Once it opens, Rulber’s Restaurant Mas Cantina’s regular hours will be 11 a.m. to 10 p.m., Sunday through Thursday, and 11 a.m. to 11 p.m., Friday and Saturday.

Rulber’s will open in early 2026

The menu for Rulber’s is still being finalized. Though he didn’t want to share all of the details of the menu just yet, De La Torre said it will have a range of traditional Mexican dishes, including tamales, tacos and fajitas.

But, he says, there will be a twist.

“It’s going to be Mexican food, but a little bit different,” he said. “And it’s all going to be made fresh every day.”

A seasoned restaurateur, De La Torre opened the original Mi Ranchito in Olathe in 2004. After more than two decades, he said he’d continued drumming up new menu items at Mi Ranchito — so many, at this point, that he’s ready to create an entirely different restaurant for them.

“I kept coming up with new ideas,” he said. “I thought it was time to put them on a different menu.”

Today, Mi Ranchito has seven locations around the metro, including Johnson County spots in Olathe, downtown Overland Park and Lenexa.

But not Prairie Village yet. That’s part of what De La Torre said made him set his sights on the Meadowbrook Shopping Center for this new concept.

“This will be something new, but something special,” he said. “Excellent food, excellent service, and a great restaurant for families to come to and feel like they’re home.”

Another Broken Egg Cafe closed this week

  • As of Monday, Another Broken Egg’s Prairie Village location is now listed as permanently closed on its website.
  • The restaurant occupied its space at the Meadowbrook Shopping Center for roughly two years, serving southern-style breakfast and lunch.
  • Representatives from the Florida-based company did not immediately respond to Post inquiries about the closure.
